One thing you will find when you visit our North Carolina bed and breakfast inn is that we love to cook! Below we have included a sample of one of our favorite recipes. Bon Appetite!

 
Pumpkin Pancakes w/ Apple Cider Syrup
 
  • 1 cup all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp ground cinnamon
  • 1 cup milk
  • 2 Tbs. vegetable oil
  • 1 Tbs. sugar
  • 1/2 tsp. salt
  • 2 eggs separated
  • 1/2 cup canned pumpkin

Combine the flour, sugar, baking powder, salt and cinnamon in a bowl. In another bowl, whisk the egg yolks, milk, pumpkin and oil. Stir into the dry ingredients just until moistened. In a mixing bowl, beat the egg whites until soft peaks form; fold into pancake batter.

Pour batter by 1/4 cup cupfuls onto a hot greased griddle. Turn when bubbles from on top of pancakes. Cook until second side is golden brown. Makes 15. Serve with Syrup.

 
Apple Cider Syrup
 
  • 3/4 cup apple cider or juice
  • 1/2 cup while corn syrup
  • 1/2 tsp. lemon juice
  • 1/8 tsp. nutmeg
  • 1/2 cup packed brown sugar
  • 2 Tbs. butter
  • 1/2 tsp. ground cinnamon
In saucepan, combine the syrup ingredients, Bring to a boil over medium heat, stirring occasionally. Reduce heat; simmer, uncovered, for 20-25 minutes.
